LEARN HOW TO COOK KIELBASA
SMOKED KIELBASA
Remember firstly, that smoked kielbasa is fully cooked. You can eat it as soon as you buy it. Here are a few suggestions for cooking. Place kielbasa in pot of water. Bring water to boil, turn down heat and let shimmer for 5 to 10 minutes.
FRESH KIELBASA
Place kielbasa in water. Bring water to boil, cover pot, reduce heat, and let cook for 30 minutes. During the BarBQ Season smoked kielbasa is extremely popular on the grill with your favorite BBQ sauce.
KIELBASA SIMMERED IN BEER AND ONIONS
Serves 4 to 6
4- tablespoons butter
1- 2 pound kielbasa
4- to 5 small onions, thinly sliced
1- 12 ounces bottle of beer
1. Use large heavy skillet. Melt the butter and sauté the onions over medium heat until translucent.
2. Add the kielbasa to the pan and brown it 3 to 4 minutes on each side.
3. Pour the beer over the sausage and onions. Bring to a boil. Reduce the heat and simmer, uncovered for 35 minutes.
4. Remove the kielbasa and onions from the pan and put them on a serving dish in a warm oven.
5. Reduce the beer over high heat to 2 cups. Pour over the kielbasa and serve.

KIELBASA GRILL ALFRESCO
1 lb. kielbasa
3- firm, tart apples
3- onions
Cut kielbasa into 1 ½” slices. Wash unpeeled apples and cut in four to six wedges each. Peel onions and cut in half, then in wedges. Thread kielbasa chunks with apple and onion wedges on skewers, alternating meat with apple and onion.
Start and finish with kielbasa. Spear apples and onions diagonally so they don’t slip off while cooking.
Grill three inches above hot coals until brown and done to desired degree, about 12 minutes or juicy, well-cooked kielbasa. Serve with baked potatoes or poppy seed noodles.

KIELBASA WITH RED CABBAGE
1- head of red cabbage, sliced, boiling water
1- tablespoon of butter
1/3 - cup of lemon juice
½ - cup of red wine or beef broth
½ - teaspoon of salt
¼ - teaspoon of pepper
¾ - pound of kielbasa, diced
2 - teaspoons of brown sugar
1 - tablespoon of cornstarch
Place cabbage in colander. Pour boiling water over cabbage and drain well. Melt butter in large heavy skillet. Add cabbage. Stir in lemon juice. Cook and stir for five minutes until cabbage is pink. Add wine or beef broth, salt and pepper. Cover and simmer over medium-low heat for 45 minutes.

KIELBASA APPETIZERS
1 – pound kielbasa
1 cup dry white wine
1 heaping tablespoon light brown sugar
2 tablespoons Dijon mustard
2 tablespoons of brandy
3 tablespoons chopped fresh parsley
Freshly ground black pepper to taste
Cut kielbasa into one-inch slices. Cut each slice into quarters. Put kielbasa in heavy skillet large enough to hold all the pieces in a single layer. Cover with wine. Bring the wine to a boil. Cook, uncovered, until wine almost has evaporated and looks syrupy, about 12 minutes. Stir in brown sugar, mustard and brandy. Cook one minute more. Toss kielbasa with parsley and pepper to taste. Serve with toothpicks for spearing and thin rounds of crusty bread for dipping in the juices.

CANDY KIELBASA
1 - Kielbasa
1 - Clear Karo
1 - 7Up
Cut kielbasa into 1"pieces. Line bottom of large pan with kielbasa. Pour 7Up over kielbasa to cover. Boil over high heat, stirring often. Continue to boil until all the 7Up is gone and bottom of pan is staring to brown and is glazing kielbasa. Make sure you stir constantly so the kielbasa does not burn. When kielbasa is brown and glazed, add more soda and 1/3 bottle Clear Karo. Continue cooking down as before until kielbasa becomes very brown, glazed and candy like. Keep stirring until all the soda and karo are gone then turn onto a serving platter immediately.
